Best Trailers for Catering & Food Trucks — Buyer’s Guide

You’ve locked in the menu. You’ve got the permits lined up. Now you need a trailer that can carry a commercial kitchen safely without being overloaded, losing structural integrity on a gravel lot, or becoming unstable on a highway ramp. That is where many caterers and mobile food operators make their first major mistake: they buy for appearance or advertised price and skip the specifications that matter once the fryers contain oil, the water tanks are full, the generator is mounted, and the refrigerator is stocked.

This guide cuts straight to the practical details: GVWR, usable payload, axle and brake capacity, electrical demand, water-tank sizing, ventilation, towing requirements, and which enclosed cargo units are worth considering as the foundation for a professional concession build.

Start With the Weight, Not the Layout

A concession setup gets heavy fast. Small countertop cooking appliances may weigh less than 100 lbs, but full-size commercial floor fryers commonly weigh roughly 120-250 lbs or more before cooking oil is added. A griddle, charbroiler, two-door reach-in refrigerator, hood and fire-suppression system, stainless-steel worktables, sinks, water heater, plumbing, fresh-water tank, wastewater tank, propane cylinders, generator, air-conditioning equipment, food inventory, utensils, and cleaning supplies can add several thousand pounds.

Depending on the menu and equipment package, a completed hot-food trailer may carry 3,000-6,000 lbs or more of conversion materials, appliances, utilities, water, fuel, and operating supplies. That figure is in addition to the empty weight of the cargo trailer. Stainless wall coverings, insulated ceilings, reinforced floors, serving windows, cabinetry, electrical panels, batteries, and exterior generator compartments all reduce the payload that remains available for food and water.

That is why the first number to establish is GVWR, or Gross Vehicle Weight Rating. GVWR is the maximum allowable loaded weight assigned to the trailer by its manufacturer. It is not the amount of cargo the trailer can carry. Usable payload is calculated by subtracting the trailer’s actual empty weight, including factory options and permanent conversion work, from its GVWR.

A 7,000 lb GVWR tandem-axle trailer with two 3,500 lb axles can work for a lighter beverage, bakery, prepackaged-food, snow-cone, kettle-corn, or limited-cooking build. It may not provide enough payload for a full hot-food kitchen once tanks, cooking equipment, refrigeration, ventilation, and a generator are installed. Operators planning a more substantial kitchen should usually evaluate trailers rated around 9,990 lbs, 10,000 lbs, 12,000 lbs, or 14,000 lbs, depending on the finished design.

Many trailers certified at 9,990 lbs use tandem 5,200 lb running gear but are rated by the trailer manufacturer at 9,990 lbs. The certification label on the specific trailer controls. Do not estimate capacity by adding the axle ratings, looking at the tire size, or assuming that two visibly similar trailers have the same GVWR.

Before approving a floor plan, ask for the trailer’s VIN-specific GVWR, GAWR for each axle, factory shipping weight, tire load ratings, and estimated remaining payload. Then prepare a weight schedule that includes every permanent appliance, full propane cylinders, batteries, generator fuel, food, utensils, employees’ supplies, and the maximum expected water load. After the conversion is complete, weigh the operating trailer at a certified scale and obtain separate axle and tongue-weight measurements.

Matching the trailer to the tow vehicle matters just as much. A pickup’s advertised maximum tow rating is only one limit. You must also stay within the truck’s GCWR, GVWR, rear-axle rating, tire ratings, receiver rating, ball-mount rating, and available payload after accounting for passengers, tools, fuel, and cargo in the truck. A conventional trailer carrying 10-15% of its loaded weight on the hitch can place well over 1,000 lbs on the rear of the tow vehicle. A half-ton pickup with an 8,500 lb tow rating is not an appropriate match for a trailer that may weigh 9,990 lbs when loaded.

Concession-Ready Enclosed Units Worth Knowing

Not every cargo trailer is a smart foundation for a food-service conversion. Interior height, floor construction, frame design, wall-post spacing, roof-bow spacing, door openings, axle package, brakes, tires, and the manufacturer’s rules for structural modifications all matter.

For a working kitchen, 6’6″ of interior height should generally be treated as a practical starting point, with approximately 7 feet or more preferred when the build requires a commercial hood, make-up air, insulated ceiling, washable ceiling panels, lighting, and overhead utility runs. The final hood and ceiling clearances must be designed around the cooking appliances and approved by the local health and fire authorities.

Also confirm that the floor and crossmembers can support concentrated loads. A refrigerator, fryer, generator, or full water tank can place a large amount of weight on a relatively small footprint. Standard cargo floors are designed for distributed cargo loads, not automatically for every possible commercial-kitchen point load. Reinforcement may be required beneath appliances, tanks, serving-window openings, and generator mounts.

Wells Cargo Road Force

Wells Cargo’s Road Force line is a strong candidate for operators who want a steel-framed enclosed trailer with a clean exterior suitable for professional graphics. Depending on the exact model and options, Road Force trailers use smooth exterior materials and construction methods that give a wrap installer a more uniform surface than a basic exposed-fastener cargo body.

Current 8.5-foot-wide Road Force configurations commonly provide approximately 6’6″ of standard interior height, with additional-height options available on applicable builds. The line uses a 3/4-inch PlexCore-style floor decking system, but the presence of substantial floor decking does not eliminate the need to review crossmember spacing and reinforce concentrated appliance or tank locations.

Road Force models are offered in multiple lengths and running-gear packages. Tandem-axle configurations may be available with 7,000 lb ratings or with heavier running gear and a trailer rating around 9,990 lbs, depending on the exact size and dealer-ordered configuration. For a concession conversion, obtain the actual certification label and factory build sheet rather than relying on a general model-family description.

The Road Force can work well for a branded mobile kitchen when the serving openings, hood penetrations, plumbing, generator installation, and equipment anchoring are planned before fabrication begins. Any wall or roof opening should be properly framed so the modification does not compromise body strength or create a water-intrusion problem.

United Trailers (Commercial Cargo and Vending Lines)

United Trailers builds stock cargo units as well as highly configurable commercial trailers suited to vending, concession, motorsports, and specialty applications. The company’s UXT commercial cargo line is a steel unibody design that can be ordered in numerous widths, lengths, axle configurations, and hitch styles.

United’s 7-foot-wide and 8.5-foot-wide UXT trailers typically provide approximately 7 feet of interior height. Current construction information includes 16-inch-on-center floor crossmembers, wall posts, and roof bows, along with a 3/4-inch plywood floor and 3/8-inch plywood wall liner. Available running gear extends well beyond basic 3,500 lb tandem axles, allowing the buyer to configure a trailer around the finished kitchen’s calculated weight.

An 8.5×24 United trailer can provide enough interior length for a substantial appliance line, preparation area, refrigeration, sinks, storage, and one or more service positions. However, installing large serving windows on both sides can affect wall strength, cabinetry space, hood routing, and customer workflow. Window sizes and locations should be engineered as part of the original build rather than cut wherever space appears available after the interior is installed.

United is based in Bristol, Indiana, which can be useful for buyers who value regional manufacturer and dealer support. Specifications still vary considerably by model and order, so confirm interior height, GVWR, axle ratings, floor structure, warranty terms, and approved modification procedures on the exact trailer being considered.

Legend Manufacturing

Legend is known for aluminum-framed enclosed trailers that offer corrosion resistance and lower empty weight compared with many similarly sized steel-framed units. Aluminum does not develop red rust in the same way as carbon steel, which can be valuable around moisture, road salt, steam, and frequent cleaning. It is not maintenance-free, however, and aluminum components can still corrode or suffer damage when exposed to chemicals, trapped moisture, or incompatible metals.

Legend’s Thunder 7×16 tandem-axle trailer is available at a 7,000 lb GVWR, while the 8.5×20 Thunder can be configured in the 7,000-9,990 lb GVWR range. The 8.5-foot-wide Thunder uses an aluminum frame, 16-inch-on-center construction, a 3/4-inch engineered wood floor, a one-piece aluminum roof, and a bonded smooth aluminum exterior.

That construction can make the Thunder a useful foundation for a lighter concession build, but buyers should not assume that an aluminum trailer automatically has more payload. Payload depends on the certified GVWR minus the completed trailer’s actual weight. The original wood-based floor also remains vulnerable to prolonged leaks and improper washing, so penetrations, plumbing connections, wall seams, and service-window framing must be sealed carefully.

Legend also offers heavier configurations in other enclosed product lines. Operators who like the corrosion resistance of aluminum but need more capacity should compare the full model range rather than limiting the search to a 7,000 or 9,990 lb Thunder.

Darkhorse Cargo

Darkhorse Cargo is worth considering when acquisition cost is a major constraint and the menu allows a relatively light conversion. These steel-framed, aluminum-skinned cargo trailers are commonly available in practical concession sizes and can cost less than premium custom or all-aluminum alternatives.

A 7×16 tandem-axle model can work for snow cones, beverages, packaged desserts, kettle corn, coffee, sandwiches, or another operation with limited heavy equipment. Larger 8.5-foot-wide models give the fabricator more room for a working aisle and deeper equipment, but they also invite a heavier build. Moving from a 7,000 lb package to a trailer certified around 9,990 lbs may be necessary once refrigeration, sinks, water, propane, and cooking equipment are added.

Smaller 7,000 lb Darkhorse cargo trailers may still be available below $10,000 before conversion, depending on size, model year, freight, and options. Larger 8.5×20 units, extra-height packages, premium exterior panels, and 9,990 lb configurations can exceed that figure before any kitchen work begins.

Evaluate the frame, crossmember spacing, floor material, wall and roof spacing, axle ratings, brakes, tires, door hardware, and warranty just as carefully as you would on a more expensive trailer. A lower-cost base can be a good value when it matches the calculated load. It becomes expensive when the finished kitchen needs structural repairs, axle upgrades, or a complete replacement because the original trailer was undersized.

Power Needs: Generator or Shore Power or Both

There is no universal generator size for a catering trailer. Electrical demand must be calculated from the actual appliance nameplates, voltage, current draw, duty cycle, and motor-starting requirements. Refrigerators, freezers, water pumps, air conditioners, exhaust fans, and ice machines can draw considerably more power during startup than during normal operation.

Begin with an equipment schedule listing every electrical load: refrigeration, freezer, ice maker, water heater, water pump, hood exhaust, make-up-air fan, air conditioner, warming cabinet, microwave, induction equipment, griddle, fryer, coffee brewer, lighting, receptacles, point-of-sale system, battery charger, and exterior signage. A licensed electrician should calculate the expected simultaneous load, branch-circuit requirements, voltage-drop allowance, and generator surge capacity.

A 30-amp, 120-volt shore-power connection provides a nominal maximum of 3,600 volt-amperes. That can be adequate for a light concession trailer using propane for cooking and carefully managed electrical equipment, but it is easy to exceed once air conditioning, refrigeration, a water heater, and countertop appliances operate together.

A properly configured 50-amp, 120/240-volt, four-wire service provides a nominal maximum of 12,000 volt-amperes across two 120-volt legs. It offers substantially more capacity, but it still may not support an all-electric commercial kitchen containing multiple high-wattage cooking appliances. Full-electric builds can require 12,000-20,000 watts or more, depending on the menu and appliance package.

Using propane for selected cooking appliances can reduce generator demand, but it introduces fuel-storage, regulator, shutoff, ventilation, fire-protection, and inspection requirements. Propane cylinders generally need to be installed outside the occupied cooking area, secured upright, protected from impact, and connected through approved components. The local fire authority should approve the fuel-system design.

A flexible professional build often includes both shore power and generator capability. The shore-power inlet allows the operator to use venue electricity when suitable service is available, while the generator supports roadside service, private events, and locations without adequate power. The electrical system must include an approved method of selecting between sources so the generator cannot backfeed the shore cord or utility supply.

Generator placement requires more than adding a tray to the tongue or rear bumper. The generator’s operating weight, fuel, vibration, ventilation, service clearance, weather protection, exhaust path, and effect on tongue weight must all be considered. A rear installation can reduce tongue weight and contribute to sway; a tongue installation can overload the hitch or tow vehicle’s rear axle.

Never operate a portable generator inside the trailer, inside an unventilated box, or near doors, windows, service openings, make-up-air intakes, or customer areas. Exhaust must be directed safely away from the unit, and the trailer should have appropriately located carbon-monoxide and propane detectors. Generator compartments intended for operation must be engineered for that purpose rather than improvised from ordinary storage cabinets.

For a substantial hot-food trailer, wiring for a properly calculated 50-amp service during the initial build is often more economical than opening finished walls later. However, the correct answer is not automatically “50 amp.” The inlet, cord, transfer equipment, distribution panel, conductors, receptacles, grounding, bonding, GFCI protection, and generator must all be designed as one listed and code-compliant system.

Fresh and Grey Water: Size Matters More Than You Think

Health requirements vary according to jurisdiction, menu, food-handling process, and whether the unit operates independently or from an approved commissary. A mobile kitchen performing food preparation will commonly need a dedicated hand-washing sink, a three-compartment utensil-washing sink, pressurized hot and cold potable water, a water heater, and permanently installed fresh-water and wastewater tanks. A unit selling only sealed, prepackaged food may qualify for different requirements, but that decision belongs to the reviewing health department.

In Indiana, mobile-food guidance generally requires the wastewater holding tank to have at least 15% more capacity than the fresh-water supply tank. That is more specific than simply making the tanks equal in size. A 50-gallon fresh-water tank paired with a 60-gallon wastewater tank satisfies that ratio, as does a 100-gallon fresh tank paired with a 120-gallon wastewater tank.

Those capacities are examples, not universal minimums. The required supply depends on the number and size of sink compartments, hand washing, menu, operating duration, employee count, cleaning procedures, water-heater recovery, and access to an approved servicing area. A 30-gallon system may be enough for one approved limited operation, while a high-volume festival kitchen may need 100 gallons or more.

Every gallon of water weighs approximately 8.34 lbs. A full 100-gallon fresh-water tank adds about 834 lbs before counting the tank, supports, plumbing, water heater, or wastewater. A 120-gallon wastewater tank can hold approximately 1,001 lbs of liquid. Fresh and waste tanks may not always be completely full at the same time, but the chassis, tank supports, axles, tires, and weight-distribution plan should be evaluated for realistic worst-case conditions.

Use food-grade potable-water tanks, approved drinking-water hoses, protected fill connections, and plumbing materials suitable for the operating temperature and pressure. Wastewater must remain contained and be discharged only at an approved location. Tank drains, valves, vents, and cleanouts should be accessible without requiring employees to crawl beneath a hot trailer or release wastewater near food-service areas.

Mount tanks low and close to the trailer’s axle area when the design allows. A large tank mounted high increases the center of gravity. A fresh tank placed at the extreme front can overload the hitch, while a full wastewater tank behind the axles can remove tongue weight as water moves from the supply side to the waste side.

For a conventional bumper-pull trailer, a loaded tongue weight around 10-15% of the trailer’s actual loaded weight is a common stability target, subject to the trailer and hitch manufacturers’ instructions. Do not rely on the empty trailer’s tongue weight. Measure the finished trailer with operating equipment, normal inventory, fuel, and representative water loads.

Custom Build Base vs. Pre-Built Concession Unit

You have two basic paths: purchase a factory-built or professionally completed concession trailer with service windows and utility systems already installed, or purchase a cargo trailer and commission a conversion designed around your exact menu.

A completed concession unit can be faster to place into service and may cost less than a one-off premium build. It also gives you an opportunity to inspect a largely finished kitchen before purchase. The trade-off is that the window positions, appliance line, sink arrangement, tank capacity, aisle width, electrical service, and hood system may have been selected for a different menu or operating style.

Do not assume that a trailer described as concession-ready is automatically permit-ready in your county. A serving window and stainless-steel counter do not prove that the plumbing, electrical system, fire suppression, tank capacity, ventilation, equipment certifications, or interior finish will pass local review.

A custom build on a properly selected cargo base costs more and takes additional planning, but it allows the kitchen to be designed around your menu, production sequence, staffing level, service side, expected event volume, and cleaning workflow. For an operator planning to use the rig for five to ten years, better workflow can save thousands of unnecessary steps during service and reduce the temptation to make unsafe modifications later.

If you choose the custom route, establish the finished weight before selecting the base trailer. Then confirm that the manufacturer permits the required wall, floor, and roof modifications. Cutting a large service window or hood opening without proper reinforcement can weaken the body, cause leaks, or affect warranty coverage.

Use a fabricator with documented mobile-food experience, not only general welding or cabinet experience. The builder should understand appliance listings, washable food-contact surroundings, plumbing slopes, tank ventilation, shore and generator power, propane systems, hood clearances, make-up air, fire suppression, equipment anchoring, axle loading, and inspection documentation.

The fabricator, electrician, plumber, propane technician, hood contractor, and fire-suppression provider should coordinate before the interior is closed. Routing a gas line, drain, exhaust duct, or 50-amp feeder after the walls and cabinets are complete is expensive and often results in compromised service access.

A Few Things to Check Before You Sign

  • Certification label and payload: Read the VIN label on the actual trailer. Confirm GVWR, each axle’s GAWR, tire size, tire load rating, and cold inflation pressure. Subtract the trailer’s verified empty weight and every permanent conversion component from GVWR to estimate remaining operating payload.
  • Floor construction: Crossmember spacing, frame design, floor-panel material, fasteners, and reinforcement affect concentrated-load capacity. Ask how the floor will support refrigerator casters, fryer legs, full tanks, batteries, and generator mounts. Reinforcement should transfer loads into structural members rather than only into plywood.
  • Serving-window framing: Large wall openings must be framed to restore support removed with the original wall posts. Confirm header, jamb, sill, weather sealing, latch, awning support, and travel restraint details before the opening is cut.
  • Ramp or side door: Plan how large equipment will enter and leave the trailer. A refrigerator or fryer will eventually need service or replacement. Verify clear door width and height after finished flooring, walls, counters, and exterior trim are installed.
  • Interior height: Measure usable finished height, not only the unfinished cargo-box specification. Insulation, ceiling panels, ducts, lighting, hood components, and flooring can reduce headroom.
  • Exterior finish: Smooth or bonded exterior panels generally provide a cleaner wrap surface, but the wrap installer should inspect panel seams, adhesives, rivets, trim, and substrate compatibility. Exposed fasteners are not automatically a structural defect, though they require additional preparation for graphics.
  • Axle and brake package: Confirm the axle manufacturer, GAWR, suspension type, brake size, hub and bearing service parts, tire load range, and breakaway system on the VIN-specific build sheet. There is no single axle brand used across every trailer manufacturer. Diamond C’s premium FMAX, HDT, LPT, LPX, WDT, and DEC lines use Lippert axles as standard, while enclosed cargo manufacturers may specify different running gear by model and option package.
  • Indiana brake requirements: Indiana requires trailers and semitrailers operated at a gross weight of 3,000 lbs or more to have compliant brakes. The towing setup should include a compatible in-cab brake controller, properly adjusted trailer brakes, a functioning breakaway switch and battery, safety chains, and a correctly wired seven-way connector.
  • Tires and wheels: Verify that the combined tire capacity supports the certified axle ratings at the specified inflation pressure. Check the tire date codes, speed rating, valve stems, lug-nut torque procedure, and availability of a correctly rated spare.
  • Hood and fire suppression: Cooking that produces grease-laden vapors generally requires an approved Type I hood and fire-suppression system. The hood must be sized around the actual appliance line, with required overhangs, exhaust capacity, clearances, make-up air, shutoffs, and inspection access.
  • Ventilation and cooling: An air conditioner does not replace hood exhaust or make-up air. The kitchen needs a balanced system that removes cooking heat and contaminants without creating excessive negative pressure, pilot-light problems, or doors that are difficult to open.
  • Electrical documentation: Request a load schedule, panel directory, wiring diagram, generator specifications, shore-power rating, conductor sizes, overcurrent protection, source-transfer method, and inspection record. Receptacles in wet or food-preparation areas should have the protection required by the applicable electrical code.
  • Water and plumbing: Confirm potable-water capacity, wastewater capacity, water-heater rating, pump flow, accumulator if used, sink dimensions, drain routing, tank vents, winterization access, and approved wastewater-disposal procedures.
  • Propane installation: Cylinders, regulators, piping, flexible appliance connectors, shutoff valves, protective barriers, leak testing, and detector placement must be designed for mobile service. Household or improvised components are not an acceptable substitute for an inspected commercial installation.
  • Equipment anchoring: Refrigerators, fryers, griddles, tanks, cylinders, generators, shelving, and countertop appliances must remain secure during emergency braking and evasive maneuvers. Ordinary cabinet screws or friction alone may not restrain heavy commercial appliances.
  • LED lighting: Interior and exterior LED lighting is common on current quality builds and reduces electrical demand. Plan task lighting over preparation, cooking, washing, and service areas, plus exterior lighting for early-morning setup and late-night teardown.
  • Warranty implications: Ask the trailer manufacturer and conversion company which structural cuts, welded attachments, roof penetrations, electrical changes, and aftermarket components affect warranty coverage. Obtain the answer in writing.
  • Tow-vehicle limits: Compare the completed trailer with the tow vehicle’s receiver rating, maximum trailer rating, GCWR, payload, rear GAWR, tire ratings, and allowable tongue weight. A weight-distribution hitch may improve handling on an approved bumper-pull combination, but it does not increase any certified rating.
  • CDL threshold: A trailer rated above 10,000 lbs does not, by itself, automatically require a Class A CDL. The Class A threshold generally applies when the combination has a GCWR or actual gross combination weight of 26,001 lbs or more, whichever standard applies, and the towed unit has a GVWR or actual gross weight over 10,000 lbs. Commercial operators should verify Indiana and federal requirements for their exact truck, trailer, operating weight, and interstate or intrastate use.

These are planning ranges, not guaranteed retail quotes. Trailer prices change with size, axle package, interior height, exterior material, doors, freight, dealer preparation, and model year. Conversion pricing changes even more dramatically with the menu, appliance brands, stainless-steel work, insulation, service windows, water capacity, electrical service, generator package, propane system, hood, make-up air, fire suppression, refrigeration, HVAC, cabinetry, graphics, and permitting requirements.

A light cold-food or beverage trailer may stay near the lower end of the ranges. A professionally built mobile kitchen with commercial refrigeration, multiple cooking appliances, a listed hood and suppression system, substantial fresh and wastewater capacity, generator power, air conditioning, stainless finishes, and a full exterior wrap can exceed $100,000 and may move well beyond that figure.

Do not compare two quotes only by trailer length or the number of appliances shown. One quote may include a properly engineered hood, inspected electrical system, reinforced appliance mounts, commercial water heater, adequate tanks, and certified equipment, while another may omit those items or use components that will not pass plan review.

Also budget for sales tax, delivery or freight, title and registration, health-department plan review, fire inspection, local permits, insurance, commissary expenses, generator fuel, initial food inventory, spare tires, wheel chocks, stabilizers, signage, point-of-sale equipment, and modifications to the tow vehicle. A bargain trailer that requires a heavier truck can change the total project cost substantially.

For qualifying business property acquired and placed in service after January 19, 2025, federal law restored a 100% additional first-year bonus depreciation deduction. Eligibility depends on the property, acquisition, business use, placed-in-service date, tax basis, and other tax circumstances. It is a depreciation deduction rather than a purchase rebate, so discuss Section 179, bonus depreciation, state conformity, financing, and potential future depreciation recapture with a qualified tax professional before relying on a tax benefit in the budget.

Before You Finalize Anything

Talk to your county health department before purchasing the trailer or approving the conversion. Get the current plan-review requirements in writing and submit the proposed menu, equipment list, plumbing plan, tank capacities, finish materials, and floor plan. In Owen County, new mobile units are required to complete plan review before applying for the operating permit, including submission of a floor plan and proposed menu.
